Recipe Summer Veggie Wrap
Days are getting longer, the sun is getting brighter and the body starts to ask for more salad! Here is a great way to add more fresh raw veggies in your diet with these summery, refreshing bites.
SUMMER VEGGIE WRAP

1 avocado
1 apple
1 cup alfa alfa sprouts
2 red peppers
2 carrots
a few chives
a few coriander leaves
a few basil leaves
a few lettuce leaves
rice paper
Julienne red pepper, carrot and apple, cut avocado in strips, chop chives in half, chiffonade basil leaves and pick and separate coriander leaves. Once you have prepared all the veggies, boil some water and place in a bowl. Dip one rice paper in a bowl for a few seconds, until the paper is soft and pliable. Transfer the rice paper on a chopping board and star filling. First, place coriander leaves, then a few carrot, pepper, avocado and apple strips in the middle of the rice paper, leaving about 1.5 inches uncovered on each side. Top off with basil, sprouts and some lettuce. Fold the sides inward, then tightly roll the wrapper until it is all rolled up. Place seam down and cut diagonally in the middle. Repeat until you use up all the remaining ingredients. Serve with teryaki or sweet chilli sauce.

5 bananas
5 ice cream sticks
dark cacao coating
100gr raw cacao paste
1 tbsp agave nectar
pinch of salt
white chocolate coating
100 gr white cacao butter
30 gr ground cashews
1 tbsp agave nectar
1/4 tsp ground vanilla bean
Topping Ideas:
chopped pecans, hazelnuts, pistachios, coconut chips
Peel bananas and insert the sticks one one side. Store them in an airtight container and freeze them overnight. In two separate bowls,add the ingredients for the 2 kinds of cacao coating. Use a larger bowl filled with hot water to place the small bowls inside to melt the chocolate. Once the chocolate is melted start dipping the bananas to cover and sprinkle them with nuts of your choice. I made white chocolate covered bananas with pecans,dark chocolate bananas with coconut chips and black &white bananas.

Makes 18 yoga muffins
1 cup gluten-free flour mix
1 cup corn meal
1 cup almond pulp ( from making almond milk)
1 1/3 cup almond milk
1/2 cup coconut oil,melted
1/3 cup applesauce
1/4 tsp vanilla powder
1 tsp fresh grated ginger
1 tsp cinnamon
1 tsp apple cider vinegar
a few drops of stevia
1 tsp baking powder baking soda
1 tsp xanthan gum
In a large bowl,whisk together flour,corn meal,almond pulp,baking powder,baking soda,cinnamon,vanilla and xanthan gum. Add in the rest of the ingredients and stir until incorporated. Transfer in lined muffin trays,sprinkle with chopped almonds and bake at 180 for 20 minutes.
